The legendary grape of Paramo in León, Prieto Picudo is celebrated and revivified under the direction of Pedro Gonzalez Mittelbrunn in this exciting project. A historied, indigenous varietal almost forgotten, this bottling champions decades of work by Pedro and Castilla y Leon cooperatives to reclaim the importance and prominence of Paramo as a unique winemaking region using its native cultivar.

Wine Description
These mature vines in the south of Paramo are more than 35 years old, though other areas have vines as old as 100, and are planted in soils that are deep, acidic, and poor, with a clay texture mostly made up of gravel and pebbles. The climate is extreme continental, experiencing temperatures as high as 104ºF in summer and as low as 5ºF in winter. During spring, summer and autumn, diurnal temperatures consistently range between 40 degrees. This daily contrast favors the accumulation of aromatics and substantive development of the grapes.
Harvesting is done manually, and the grapes are pre-macerated cold for 72hours in stainless steel before undergoing fermentation for up to 12 days. The wine is aged in neutral French and American oak barrels of fourth and fifth use for at least 6 months for a pleasant and relaxed drinkability.
El Aprendiz (the apprentice) is a young, vibrant red with a structured force to it that softens to a balanced, velvety persistence.
